Ingredients
5 medium eggs
1 green onion, finely chopped
2 tbsp carrot, chopped or grated
¼ tsp salt
⅛ tsp black or white pepper
1 tsp neutral oil (e.g. canola, vegetable, or light olive oil)
Instructions
- In a bowl, whisk together the eggs, salt, and pepper until well combined.
- Add the chopped carrot and green onion, whisking again to incorporate.
- Heat a 10‑inch non-stick pan over low heat and add the oil, swirling to coat.
- Pour in about one-third of the egg mixture, tilting to spread it evenly.
- Once the top is nearly set, gently lift the edges and begin rolling the omelette inward using a rice paddle or spatula.
- As you complete the first roll, pull it to one side of the pan and pour in the next third of the egg. Tilt the pan so the liquid fills any gaps beneath.
- Roll again, then repeat with the final third of the egg, sealing the roll by holding the omelette against the pan with a spatula if needed.
- Transfer the cooked roll to a cool surface and rest for 2 minutes.
- Slice into 6–8 even pieces, trimming any tapered ends.
- Serve warm or allow it to cool completely before storing.
