Ingredients

Teriyaki Sauce

  • ½ cup low sodium soy sauce

Cornstarch Slurry

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Ground Turkey and Broccoli Stir Fry

  • 1 pound ground turkey meat (80/20)
  • 1 medium carrot, julienned
  • 2 cups broccoli florets, cut into bite-size pieces
  • 1 teaspoon minced garlic
  • 1 teaspoon thinly sliced ginger
  • 1 stalk green onion, sliced
  • Toasted sesame seeds (optional garnish)
  • Cooking oil (such as vegetable or sesame oil) as needed

Instructions

  1. Cook rice: Prepare the rice according to package instructions and keep it warm while you prepare the stir fry and sauce.
  2. Prepare cornstarch slurry: In a small bowl, mix 1 tablespoon cornstarch with 2 tablespoons water until smooth. Set aside.
  3. Make teriyaki sauce: In a small saucepan, combine ½ cup low sodium soy sauce, ¼ cup water, 1 tablespoon brown sugar, 1 teaspoon rice vinegar, and ½ tablespoon minced garlic. Heat over medium until the sauce starts to simmer.
  4. Thicken sauce: Pour the cornstarch slurry into the simmering soy sauce mixture and stir continuously until the sauce thickens, about 30 seconds. Remove from heat and set aside.
  5. Steam broccoli: Steam the broccoli florets for 2 to 3 minutes until tender-crisp, then set aside.
  6. Sauté aromatics: Heat a large pan or wok over medium-high heat and add cooking oil. Once hot, add 1 teaspoon minced garlic and 1 teaspoon sliced ginger, sauté for about 15 seconds until fragrant.
  7. Cook ground turkey: Add 1 pound ground turkey to the pan and cook for about 5 minutes, stirring occasionally, until turkey is almost cooked through.
  8. Add teriyaki sauce: Pour the prepared teriyaki sauce over the turkey and stir well to combine. Cook for another 2 to 3 minutes until turkey is fully cooked.
  9. Add vegetables: Stir in the julienned carrots and cook for 1 minute. Then add the steamed broccoli and mix well for about 30 seconds.
  10. Finish and serve: Turn off the heat, garnish the stir fry with sliced green onions and optional toasted sesame seeds. Serve the turkey teriyaki mixture over the cooked rice.
