Instructions
- Cook the sweet potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and a pinch of salt. Stir occasionally and cook for about 8–10 minutes until they start to soften and develop a golden color.
- Steam the sweet potatoes: Pour in ½ cup of bone broth, cover the skillet with a lid, and let the sweet potatoes steam for a few more minutes until fork-tender. This ensures they cook through without burning.
- Prepare the turkey mixture: Push the sweet potatoes to one side of the skillet. If the skillet looks dry, add a little more olive oil. Add the ground turkey, diced onion, and minced garlic to the open space. Cook, breaking up the turkey with a spatula, for about 5–7 minutes until browned and fully cooked.
- Combine and season: Once the turkey is cooked, stir it together with the sweet potatoes. Add diced bell pepper, cumin, smoked paprika, chili powder, salt, and black pepper. Stir well and cook for another 3–5 minutes until the veggies soften and the skillet becomes fragrant.
- Add spinach and cheese: Toss in chopped spinach and stir through the skillet until wilted, about 1–2 minutes. Sprinkle shredded mozzarella cheese evenly over the top and let it melt for about a minute to finish the dish.
- Serve and garnish: Spoon the skillet into bowls and top with sliced avocado, a scoop of cottage cheese or Greek yogurt, a drizzle of honey, and optional fresh parsley. Enjoy warm.
