Instructions
- Heat the Oil: Preheat a large 10-12 inch cast iron skillet over high heat and add 2 tablespoons of canola oil. Allow the oil to become hot but not smoking to ensure proper searing.
- Cook the Potatoes: Reduce heat to medium-high and add the diced potatoes evenly in the skillet. Sprinkle 1 teaspoon kosher salt over the potatoes. Stir once and then let them sit without stirring to brown the bottom. Cook, stirring often, until golden and tender but not soft, about 6 minutes.
- Remove Potatoes and Cook Ground Beef: Transfer the browned potatoes to a dish. Add ground beef to the skillet and cook, breaking up the meat with a spatula, until it starts to brown.
- Add Vegetables: Push the beef to the sides of the skillet. Add diced yellow onion and cook until softened. Then stir in the diced red bell pepper and cook until soft. Drain any excess grease if necessary.
- Season and Combine: Mix in Worcestershire sauce, ketchup, liquid smoke, Dijon mustard, smoked paprika, garlic powder, dried oregano, salt, and black pepper. Continue to cook while breaking up the beef and stirring in the potatoes and onions, until the meat is fully cooked and potatoes are tender, about 6 to 8 more minutes.
- Adjust Seasoning and Serve: Taste and add more salt or pepper if needed. Serve hot, garnished with freshly chopped parsley.
