Description

This Ground Beef and Broccoli recipe features tender broccoli florets and flavorful ground beef cooked in a savory soy-ginger sauce. It’s a quick and satisfying stir-fry dish perfect for a weeknight dinner, offering a perfect balance of protein and greens with a hint of sweetness and spice.

Ingredients

Sauce

  • 1/3 cup low-sodium soy sauce or tamari
  • 3 tablespoons beef broth
  • 3 garlic cloves, minced
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 (1-inch) piece fresh ginger, peeled and minced
  • 1 teaspoon toasted sesame oil
  • Dash of crushed red pepper flakes

Main Ingredients

  • 1 head broccoli, cut into florets (about 4 cups)
  • 2 tablespoons water
  • 1 tablespoon avocado oil or olive oil
  • 1 pound ground beef
  • 1/2 yellow onion, chopped
  • Kosher salt and black pepper, to taste

For Garnish and Serving

  • Sesame seeds, for garnish
  • Sliced green onions, for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Prepare the sauce: In a medium bowl, whisk together the soy sauce, beef broth, minced garlic, honey, cornstarch, minced fresh ginger, toasted sesame oil, and a dash of crushed red pepper flakes until smooth. Set this mixture aside to be used later.
  2. Steam the broccoli: Place broccoli florets and 2 tablespoons of water in a large nonstick skillet over medium heat. Cover with a lid and steam the broccoli until it turns bright green and is just tender, about 4 to 5 minutes. Transfer the broccoli to a plate and set aside.
  3. Cook the ground beef and onion: In the same skillet, heat 1 tablespoon of avocado or olive oil over medium-high heat. Add ground beef and chopped onion, cooking until the beef is no longer pink and is nicely browned, about 5 to 7 minutes. Stir and break up the beef as it cooks. Season with kosher salt and black pepper to taste. Drain excess fat if needed.
  4. Combine beef with sauce and broccoli: Reduce the heat to low and pour the prepared sauce over the cooked beef mixture. Cook for a few minutes, stirring occasionally, until the sauce thickens and coats the meat evenly. Add the steamed broccoli back into the skillet and stir gently to combine everything well.
  5. Garnish and serve: Remove the skillet from heat. Garnish with sesame seeds and sliced green onions if desired. Serve immediately alongside cooked rice or noodles for a complete meal.

Notes

  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • If you prefer a spicier dish, increase the crushed red pepper flakes according to taste.
  • Use tamari instead of soy sauce to make the dish gluten-free.
  • To save time, precut broccoli florets can be used.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated on the stovetop or microwave.
