Ingredients
Chimichurri
- 1 cup fresh cilantro
- ⅔ cup fresh parsley
- ¼ cup fresh oregano
- 4 garlic cloves, minced
- ⅔ cup olive oil
- ¼ teaspoon crushed red pepper flakes

Tacos
- 4 filet mignon steaks

- 8 to 12 small corn tortillas
- ¾ cup sweet corn
- ¼ cup crumbled feta, or cotija for topping
- pickled onions, for topping
Instructions
- Chimichurri – Place the cilantro, parsley, and oregano on a cutting board. Chop finely with a sharp knife. Transfer to a bowl and add garlic, vinegar, olive oil, salt, pepper, and red pepper flakes. Stir to combine and set aside.
- Tacos – Preheat grill. Season steaks with salt and pepper. Grill for 5 minutes per side until desired doneness. Let rest, then slice. Assemble tacos with steak, chimichurri, corn, feta, and pickled onions.
