Ingredients
1 pound large shrimp, peeled and deveined
3 tablespoons olive oil
2–3 cloves garlic, minced
2 tablespoons fresh lemon juice (about half a lemon)
2 teaspoons Old Bay seasoning
1/2–1 teaspoon red pepper flakes (optional, for heat)
1/2 teaspoon smoked or sweet paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Chopped fresh parsley, for garnish
Lemon wedges, for serving
Instructions
- Prepare the shrimp: Clean and rinse the shrimp under cold water, then pat them dry with paper towels. Optionally, remove the tails.
- Make the marinade: In a large bowl, combine the olive oil, garlic, lemon juice, Old Bay seasoning, red pepper flakes (if using), paprika, salt, and black pepper.
- Marinate the shrimp: Add the shrimp to the marinade, tossing gently to coat evenly. Let them sit for 10–15 minutes (no more than 30 minutes) to absorb the flavors.
- Grill the shrimp: Heat the grill or grill pan to medium-high heat. Lightly oil the grill grates or skillet to prevent sticking.
- Cook the shrimp: Place the shrimp on the grill and cook for 2–3 minutes per side until they turn pink and opaque. Be careful not to overcook, as shrimp cook quickly.
- Rest and serve: Let the shrimp rest for 1–2 minutes before serving. Arrange them on a platter, garnish with fresh parsley, and serve with extra lemon wedges for squeezing.
Notes
- For extra flavor, sauté the shrimp in sun-dried tomato oil or add extra herbs like thyme and rosemary to the marinade.
- If you prefer more spice, increase the red pepper flakes or add cayenne pepper.
- For a smoky flavor, add smoked paprika to the marinade.
- Serve with your favorite dipping sauces like garlic butter or aioli.
- Skewer the shrimp for easy grilling and serving.
