Description

Ingredients

Pizza Dough:

  • 1 batch of prepared pizza dough
  • 2 tablespoons olive oil

Chicken:

  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • kosher salt and pepper

Red Pepper Mayo:

  • ⅔ cup mayonnaise
  • ¼ cup diced roasted red peppers
  • 1 garlic clove, minced

Assembly:

  • ⅔ cup freshly grated havarti cheese
  • 4 to 6 cups shredded lettuce
  • 1 avocado, thinly sliced
  • sliced tomatoes or chopped cherry tomatoes


Instructions

  1. Prepare Pizza Dough: Divide pizza dough into 8 portions. Roll each portion thinly. Cook in a skillet until done. Repeat for all portions.
  2. Make Red Pepper Mayo: Combine mayo, diced peppers, and garlic. Mix well.
  3. Grill Chicken: Season chicken with spices. Grill until cooked through. Let rest and slice.
  4. Assemble Sandwiches: Spread mayo on bread, top with chicken, cheese, avocado, lettuce, and tomatoes. Serve immediately.
