- Salt and pepper to taste (about 1/4 teaspoon each)
Instructions
- Make Dressing: In a large bowl, whisk together Greek yogurt, mayonnaise, garlic powder, lemon juice, Dijon mustard, honey, and all the freeze-dried herbs (or fresh if preferred) until smooth. Season with salt and pepper to taste, typically about 1/4 teaspoon of each.
- Prep Chicken: Place rotisserie chicken in a food processor and pulse until finely chopped. Measure out 2 lightly packed, leveled cups of the processed chicken.
- Combine: Add the chopped chicken, diced celery, diced red onion, and roasted pepitas to the bowl with the dressing. Gently fold everything with a spatula until all ingredients are evenly coated with the dressing. Taste and adjust seasoning if necessary.
