- 2 large eggs
- 1 teaspoon vanilla extract

Instructions
- Mix dry ingredients: In a small bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
- Mix wet ingredients: In a medium bowl, whisk together the Greek yogurt, milk, eggs, vanilla extract, and melted butter until smooth.
- Combine wet and dry: Pour the dry ingredients into the wet ingredients and whisk gently until just combined. It’s important not to overmix the batter; some lumps are perfectly fine and help keep the pancakes tender.
- Heat and grease pan: Preheat a large nonstick pan over medium heat for 60-90 seconds. Lightly grease the pan with oil or butter to prevent sticking.
- Cook pancakes: Pour ¼ cup of batter onto the pan for each pancake. Cook for about 2 minutes, until the edges begin to dry and bubbles form on the surface. Flip the pancake and cook for an additional 1-2 minutes until golden brown. Grease the pan between each pancake as needed.
