Instructions

  1. Mix dry ingredients: In a small bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
  2. Mix wet ingredients: In a medium bowl, whisk together the Greek yogurt, milk, eggs, vanilla extract, and melted butter until smooth.
  3. Combine wet and dry: Pour the dry ingredients into the wet ingredients and whisk gently until just combined. It’s important not to overmix the batter; some lumps are perfectly fine and help keep the pancakes tender.
  4. Heat and grease pan: Preheat a large nonstick pan over medium heat for 60-90 seconds. Lightly grease the pan with oil or butter to prevent sticking.
