These Greek Turkey Burgers are a deliciously healthy and easy weeknight dinner option, featuring lean ground turkey mixed with Mediterranean flavors like fresh spinach, feta cheese, sun-dried tomatoes, and aromatic herbs. They’re perfect served in buns or atop salad greens for a lighter meal.
Ingredients
Main Ingredients
- 1 tablespoon avocado oil, plus 1-2 tablespoons more for cooking
- 3 cups loosely packed fresh spinach
- 1 teaspoon minced garlic
- 1 pound 97% lean ground turkey
- ½ teaspoon garlic powder
- ½ teaspoon oregano
- ½ teaspoon dried basil
- ½ teaspoon Kosher salt, or to taste
- ½ teaspoon ground black pepper
- 1 large egg
- ½ cup chopped sun dried tomatoes
- ½ cup crumbled feta cheese
Instructions
- Sauté Spinach and Garlic: Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Add the minced garlic and fresh spinach, sautéing for 3-4 minutes until the spinach has wilted completely. Remove from heat and transfer to a small bowl or plate to cool slightly.
- Prepare Burger Mixture: In a large bowl, add the ground turkey and sprinkle in garlic powder, oregano, dried basil, salt, and black pepper evenly. Add the cooled spinach mixture into the bowl and fold it into the turkey gently to combine.
- Add Egg and Other Ingredients: Crack the egg into the mixture and stir to incorporate. Then add the chopped sun-dried tomatoes and crumbled feta cheese. Use your hands as needed to mix everything thoroughly and evenly distributed.
- Shape Patties and Chill: Scoop about ½ cup of the burger mixture per patty and shape into 4 large patties or 6 smaller ones. Place the patties on a baking sheet and chill in the refrigerator for 30 minutes to firm up.
- Cook the Burgers: Heat 1-2 tablespoons of avocado oil in a large skillet over medium-high heat or preheat your grill. Cook the patties for 5-6 minutes on each side, or until the internal temperature reaches 165ºF. Remove from heat and allow the burgers to rest for 3-4 minutes before serving.
Notes
- For best results, use lean ground turkey (97% lean) to keep the burgers moist yet healthy.
- Chilling the patties before cooking helps them hold their shape and prevents breaking apart while cooking.
- These burgers pair wonderfully with whole grain buns or fresh salad greens for a low-carb option.
- Adjust seasoning to taste, especially salt and pepper, before forming patties.
- If sun-dried tomatoes are packed in oil, drain them well before chopping to avoid excess oiliness.
