  • 4-5 kiwifruit, sliced thin and chopped
  • 1 can (8 oz) crushed pineapple, undrained
  • 1/4 cup lime juice

Other Ingredients

  • 1 pouch (3 oz) liquid pectin
  • 3 drops green food coloring
  • 3/4 cup granulated sugar


Instructions

  1. Combine Ingredients: In a large microwave-safe bowl, combine the sliced and chopped kiwifruit, undrained crushed pineapple, lime juice, and sugar. Stir well to evenly distribute all ingredients.
  2. Microwave to Boil: Place the bowl in the microwave and cook on high for 10-12 minutes. Stir the mixture every 2 minutes to ensure even cooking and prevent scorching. Continue until the mixture reaches a full, rolling boil.
  3. Add Pectin and Color: Carefully remove the hot bowl from the microwave and immediately stir in the liquid pectin and green food coloring until fully incorporated.
  4. Jar the Jelly: Pour the hot jelly mixture into sanitized jars or freezer containers, leaving appropriate headspace for cooling and expansion.
  5. Cool and Set: Allow the jelly to cool at room temperature. Let it sit undisturbed overnight but no longer than 24 hours to fully set.
