Description
A rich and creamy chicken tikka masala inspired by Gordon Ramsay, featuring marinated chicken thighs seared and simmered in a spiced tomato-based curry sauce.
Ingredients
500 g boneless skinless chicken thighs, cut into bite-size pieces
150 g plain Greek yogurt
1 tablespoon lemon juice
3 garlic cloves, minced
1 tablespoon fresh grated ginger
1 tablespoon garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon salt
2 tablespoons neutral oil (vegetable or canola)
2 tablespoons unsalted butter
1 large onion, finely chopped
400 g crushed tomatoes or tomato purée
150 ml heavy cream
Fresh cilantro, roughly chopped, for garnish
Instructions
- In a large bowl, combine Greek yogurt, lemon juice, garlic, ginger, garam masala, cumin, coriander, paprika, chili powder, and salt. Mix well.
- Add chicken pieces to the marinade, coat well, and refrigerate for at least 1 hour or overnight.
- Heat oil in a skillet over medium-high heat. Sear the marinated chicken in batches until browned but not fully cooked. Remove and set aside.
- In the same pan, melt butter and sauté chopped onions until golden brown.
- Add crushed tomatoes and simmer for 10–15 minutes, allowing the sauce to thicken and flavors to develop.
- Stir in heavy cream and return the seared chicken to the pan. Simmer on low for 10–12 minutes until chicken is fully cooked and sauce is creamy.
- Garnish with chopped cilantro and serve hot with rice or naan.
Notes
- Marinate overnight for deeper flavor.
- Swap heavy cream with coconut cream for a dairy-free version.
- Add smoked paprika for a smoky twist.
- Store leftovers in the fridge up to 3 days or freeze for 2 months.
- Reheat gently with a splash of water or cream to loosen the sauce.
