Description

Garlic Butter Beef Bites with Potatoes is a cozy, one-pot slow cooker meal made with tender beef stew bites, halved baby potatoes, and a rich garlic-butter sauce. Infused with herbs and smoked paprika, it’s the ultimate comfort food that’s both hearty and flavorful.


Ingredients

2 lbs beef stew meat, cut into bite-sized pieces

1.5 lbs baby potatoes, halved

4 tbsp unsalted butter, melted

4 garlic cloves, minced

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp dried thyme

1/2 tsp dried rosemary

Salt and black pepper to taste

1 cup beef broth

2 tbsp olive oil (for searing)


Instructions

  1. Trim and cube the beef into bite-sized pieces. Halve the baby potatoes.
  2. (Optional) Parboil potatoes for 4 minutes for extra tenderness. Drain well.
  3. Heat olive oil in a skillet over medium-high heat. Sear beef on all sides until browned. Transfer to slow cooker.
  4. In a bowl, mix melted butter, garlic, onion powder, paprika, thyme, rosemary, salt, and pepper.
  5. Place potatoes in the slow cooker, add seared beef, pour garlic butter mixture over, then add beef broth.
  6. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours until beef is fork-tender.
  7. Let rest for 10 minutes before serving for best flavor and texture.

Notes

  • Add carrots, bell peppers, or parsnips for extra vegetables.
  • For a spicy version, add a pinch of red pepper flakes or cayenne to the garlic-butter sauce.
  • To thicken sauce, stir in a cornstarch slurry during the last 15 minutes.
  • Use chicken broth or bouillon + water if beef broth is unavailable.
  • For a cheesy twist, add shredded cheddar or Gruyère in the final 15 minutes of cooking.
