Ingredients
2 lbs beef stew meat, cut into bite-sized pieces
1.5 lbs baby potatoes, halved
4 tbsp unsalted butter, melted
4 garlic cloves, minced
1 tsp onion powder
1 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp dried rosemary
Salt and black pepper to taste
1 cup beef broth
2 tbsp olive oil (for searing)
Instructions
- Trim and cube the beef into bite-sized pieces. Halve the baby potatoes.
- (Optional) Parboil potatoes for 4 minutes for extra tenderness. Drain well.
- Heat olive oil in a skillet over medium-high heat. Sear beef on all sides until browned. Transfer to slow cooker.
- In a bowl, mix melted butter, garlic, onion powder, paprika, thyme, rosemary, salt, and pepper.
- Place potatoes in the slow cooker, add seared beef, pour garlic butter mixture over, then add beef broth.
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours until beef is fork-tender.
- Let rest for 10 minutes before serving for best flavor and texture.
Notes
- Add carrots, bell peppers, or parsnips for extra vegetables.
- For a spicy version, add a pinch of red pepper flakes or cayenne to the garlic-butter sauce.
- To thicken sauce, stir in a cornstarch slurry during the last 15 minutes.
- Use chicken broth or bouillon + water if beef broth is unavailable.
- For a cheesy twist, add shredded cheddar or Gruyère in the final 15 minutes of cooking.
