Ingredients
1 pound lean ground beef
6 ounces ramen noodles (2 packages), seasoning packets discarded
1 tablespoon sesame oil
1 large onion, chopped
1 red bell pepper, chopped
½ pound broccoli, cut into florets
1 cup shredded carrots
⅓ cup soy sauce
1 tablespoon brown sugar
2 teaspoons sriracha (optional)
2 teaspoons minced garlic
1 teaspoon minced ginger
1 tablespoon cornstarch
2 tablespoons water
Garnish: sliced green onions, sesame seeds
Instructions
- Cook ramen noodles in boiling water for about 2 minutes until tender. Drain and set aside.
- Whisk together soy sauce, brown sugar, sriracha, garlic, and ginger. Mix cornstarch and water into a slurry and add to sauce.
- In a skillet over medium heat, cook ground beef until browned. Drain grease and remove from pan.
- Heat sesame oil in the skillet. Add onion, bell pepper, carrots, and broccoli. Cook for 6–8 minutes until just tender.
- Add beef and noodles back to skillet. Pour in sauce and toss to coat evenly. Cook until heated through.
- Garnish with green onions and sesame seeds. Serve hot.
