Ingredients
95 g (¾ cup) plain (all-purpose) flour
2 tablespoons cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
225 g (1 ¼ cups) dark chocolate, chopped
56 g (¼ cup) butter, salted or unsalted
2 eggs (room temperature)
100 g (¾ cup) caster or granulated sugar
90 g (½ cup) Demerara or raw sugar (see notes)
1 teaspoon vanilla extract
85 g (½ cup) dark or milk chocolate chips
Instructions
- Preheat the oven: Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
- Melt the chocolate and butter: In a heatproof bowl, combine chopped dark chocolate and butter. Place over simmering water, stirring until melted. Stir in vanilla extract and set aside to cool slightly.
- Whip the eggs and sugars: Use an electric hand whisk to beat caster sugar, demerara sugar, and eggs until thick, light, and fluffy (about 5 minutes).
- Combine the dry ingredients: Sift flour, cocoa powder, baking powder, and salt into a separate bowl. Stir in chocolate chips.
- Mix the wet and dry ingredients: Fold the melted chocolate mixture into the whipped egg mixture gently. Then fold in the dry ingredients until just combined—avoid overmixing.
- Bake the brookies: Scoop tablespoons of batter onto the prepared baking tray, ensuring space for spreading. Bake for 12-14 minutes or until set with a crackly top.
- Cool and finish: Let the brookies cool on the tray for 10 minutes before transferring them to a cooling rack to cool completely. Optionally, sprinkle with sea salt.
Notes
If you don’t have demerara sugar, you can substitute it with raw sugar or turbinado sugar.
You can use milk chocolate or white chocolate for different flavors.
