Description

This Fruit Pizza Sugar Cookie is a vibrant, refreshing dessert featuring a buttery sugar cookie base topped with creamy cream cheese frosting and an assortment of fresh fruits. With endless customization options, it’s perfect for birthdays, holidays, or any casual gathering. The optional glaze adds a glossy finish that makes it as beautiful as it is delicious!

Ingredients

For the Sugar Cookie Base:

2 ½ cups all-purpose flour

1 cup butter (room temperature)

¾ cup powdered sugar

1 large egg

1 tsp vanilla extract

1 tsp baking powder

¼ tsp salt

For the Cream Cheese Frosting:

8 oz cream cheese (room temperature)

¾ cup powdered sugar (add more to taste)

1 tsp vanilla extract

23 tbsp heavy cream (adjust for spreadable texture)

For the Fruit Toppings:

½ cup strawberries (thinly sliced)

½ cup blueberries

2 kiwis (peeled and sliced)

½ cup mandarin oranges (drained if canned)

½ cup grapes (halved if large)

½ cup raspberries

Optional Glaze:

2 tbsp apricot jam

1 tbsp water

1 tsp lemon juice (optional)

Instructions

  1. Make the Sugar Cookie Base:

    • Cream the butter and powdered sugar in a large mixing bowl until light and fluffy.

    • Beat in the egg and vanilla extract.

    • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

    • Press dough evenly into a greased 12-14 inch pizza pan or large cookie sheet.

    • Bake at 350°F (175°C) for 12-15 minutes or until edges are lightly golden. Let cool completely.

  2. Make the Cream Cheese Frosting:

    • Beat the cream cheese until smooth, then add powdered sugar, vanilla extract, and heavy cream. Beat until smooth and creamy, adjusting the heavy cream for desired spreadability.

  3. Prepare the Fruit:

    • Slice the strawberries, kiwis, and grapes. Drain the mandarin oranges if using canned. Arrange the fruit on top of the cooled cookie base.

  4. Make the Glaze (Optional):

    • In a small saucepan, combine apricot jam, water, and lemon juice. Heat gently until the jam melts into a smooth glaze, then allow it to cool slightly.

    • Brush the glaze over the fruit for a shiny finish.

  5. Chill and Serve:

    • Refrigerate the fruit pizza for at least 30 minutes to set the frosting before slicing and serving.

Notes

Fruit Variations: Swap in tropical fruits like mango or pineapple for a tropical twist.

Alternative Glaze: You can skip the glaze or try a simple honey or sugar glaze instead.

Gluten-Free Option: Use a gluten-free flour blend to make the crust gluten-free.
