Description

A refreshing and indulgent iced coffee featuring cold brew infused with fresh mint syrup and swirled with rich dark chocolate coconut ganache, topped with creamy half & half or milk of choice. Perfect for a cool, flavorful pick-me-up.


Ingredients

Cold Brew Coffee

  • 1 cup Dunkin’ Donuts Cold Brew Coffee Packs, brewed according to package directions

Fresh Mint Syrup

  • 1 cup water
  • ½ cup granulated sugar
  • 1 bunch fresh mint (about 1 cup packed)

Dark Chocolate Coconut Ganache

  • ½ cup canned coconut milk (full-fat is best)
  • 5 ounces dark chocolate, roughly chopped

Assembly

  • 1-2 tablespoons dark chocolate coconut ganache
  • 1-2 tablespoons fresh mint syrup
  • 1-2 tablespoons half & half (or heavy cream, or milk of choice)
  • Ice cubes, as needed


Instructions

  1. Make the fresh mint syrup: In a medium saucepan over medium-high heat, combine water, granulated sugar, and fresh mint. Stir constantly and bring to a simmer. Once all sugar dissolves, turn off heat and let the syrup steep with the mint for about 5 minutes as it cools. Strain out the mint leaves and transfer the syrup to a jar. Refrigerate up to 2 weeks.
  2. Make the dark chocolate coconut ganache: Place coconut milk in a microwave-safe bowl and heat for 30 seconds until warm. Add the roughly chopped dark chocolate and stir until fully melted and smooth, creating a rich ganache.
  3. Assemble the iced coffee: Drizzle 1-2 tablespoons of the dark chocolate coconut ganache inside a glass or jar. Fill with ice cubes. Pour 1 cup of freshly brewed cold brew coffee over the ice. Stir in 1-2 tablespoons each of fresh mint syrup and half & half (or cream/milk of choice). Mix gently and enjoy immediately.
