Description

Ingredients

Vegetables

  • 4 ears of corn (about 3 1/24 cups), shucked and cut from the cob
  • 1 red bell pepper, cored and finely diced
  • 1/2 red onion, finely diced
  • 1 jalapeno, finely diced (a few seeds are ok for extra heat)

Seasoning

  • 2 limes, juice of
  • 1/41/2 teaspoon chili powder, optional
  • Generous pinch of mineral salt


Instructions

  1. Prepare the ingredients: Shuck the corn and cut the kernels off the cob. Finely dice the red bell pepper, red onion, and jalapeno pepper.
  2. Combine ingredients: In a large mixing bowl, combine the corn kernels, diced bell pepper, onion, jalapeno, lime juice, and salt.
  3. Mix and taste: Stir the mixture well to blend all the flavors. Taste the salsa and adjust by adding more lime juice or salt as needed. Optionally, add chili powder for a touch of heat.
