Ingredients

- 4 ears of corn (about 3 1/2 – 4 cups), shucked and cut from the cob
- 1 red bell pepper, cored and finely diced
- 1/2 red onion, finely diced
- 1 jalapeno, finely diced (a few seeds are ok for extra heat)
Seasoning
- 2 limes, juice of
- 1/4 – 1/2 teaspoon chili powder, optional
- Generous pinch of mineral salt
Instructions
- Prepare the ingredients: Shuck the corn and cut the kernels off the cob. Finely dice the red bell pepper, red onion, and jalapeno pepper.
- Combine ingredients: In a large mixing bowl, combine the corn kernels, diced bell pepper, onion, jalapeno, lime juice, and salt.
- Mix and taste: Stir the mixture well to blend all the flavors. Taste the salsa and adjust by adding more lime juice or salt as needed. Optionally, add chili powder for a touch of heat.
- Serve: The salsa makes about 4 to 5 cups, perfect for 8 servings.
- Store leftovers: Refrigerate leftovers for up to 5-6 days. For longer storage, freeze in freezer-safe containers or bags.

- To add more heat, keep some jalapeno seeds in the salsa.
