Ingredients

For the Feta Rolls:

  • 14-16 Frozen Sheet Phyllo Dough (Thawed)
  • 8 oz Feta Cheese, crumbled
  • 2 Garlic Cloves, minced
  • 2 tbsp Honey
  • 2 sprigs Fresh Thyme Leaves
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup Batistini Farms Aromatic Herb Olive Oil

For the Sauce:

  • 5 tbsp Honey
  • 1 tbsp Batistini Farms Aromatic Herb Olive Oil
  • 1 tsp Chili Pepper Flakes
  • 1 sprig Thyme Leaves


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Make Feta Filling: In a large bowl, combine the crumbled feta cheese, honey, fresh thyme leaves, salt, black pepper, and minced garlic. Mix well and set aside to allow flavors to meld.
  3. Prepare Phyllo Dough: Place 1/4 cup olive oil in a small bowl. Gently brush half of one thawed phyllo sheet with olive oil. Fold over the non-brushed side to create a half sheet. Cut the folded sheet lengthwise in half using scissors or a knife.
  4. Assemble Rolls: On the short end of each cut strip, place about 1 tablespoon of the feta mixture. Brush the sides with olive oil and fold them inward, then brush the outside of the folded sides. Roll the dough tightly like a burrito enclosing the filling fully.
