Description

Fiesta Chicken Bake is a delicious, family-friendly dish that combines tender cubed chicken, vibrant vegetables, and a cheesy topping baked to perfection. The combination of flavors and textures makes this a one-dish wonder that will quickly become a staple in your household.

Ingredients

1 ½ pounds boneless, skinless chicken breasts, cubed

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup shredded Monterey Jack cheese (or cheese of your choice)

1 cup shredded cheddar cheese

1 tablespoon olive oil

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and season with salt and pepper. Cook for about 5-7 minutes until the chicken is golden brown.
  3. Stir in the taco seasoning, diced tomatoes with green chilies, black beans, corn, red bell pepper, and green bell pepper. Mix thoroughly and allow it to simmer for about 5 minutes.
  4. Transfer the chicken and vegetable mixture to a 9×13 inch baking dish and spread evenly.
  5. Sprinkle the shredded Monterey Jack cheese over the chicken mixture. Follow with an even layer of cheddar cheese on top.
  6. Put the baking dish in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Once baked, remove from the oven and sprinkle chopped green onions and fresh cilantro on top for added flavor.
  8. Let the dish sit for a few minutes before serving to allow the cheese to set.

Notes

  • Spicy Fiesta Chicken Bake: Add a diced jalapeño pepper or a dash of cayenne pepper to the chicken mixture for an extra kick.
  • Vegetarian Version: Replace the chicken with extra beans, such as kidney beans or pinto beans, for a hearty vegetarian option.
  • Cheese Options: Experiment with different cheeses, such as pepper jack or mozzarella, to change up the flavor.
  • Add Rice: For a more filling meal, layer cooked rice at the bottom of the baking dish before adding the chicken and vegetables.
