Ingredients
1 ½ pounds boneless, skinless chicken breasts, cubed
1 can (15 oz) black beans, drained and rinsed

1 medium red bell pepper, diced
1 medium green bell pepper, diced
1 can (10 oz) diced tomatoes with green chilies
1 packet taco seasoning
1 cup shredded Monterey Jack cheese (or cheese of your choice)
1 cup shredded cheddar cheese
1 tablespoon olive oil
Salt and pepper to taste
2 green onions, chopped (for garnish)
Fresh cilantro (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and season with salt and pepper. Cook for about 5-7 minutes until the chicken is golden brown.
- Stir in the taco seasoning, diced tomatoes with green chilies, black beans, corn, red bell pepper, and green bell pepper. Mix thoroughly and allow it to simmer for about 5 minutes.
- Transfer the chicken and vegetable mixture to a 9×13 inch baking dish and spread evenly.
- Sprinkle the shredded Monterey Jack cheese over the chicken mixture. Follow with an even layer of cheddar cheese on top.

- Once baked, remove from the oven and sprinkle chopped green onions and fresh cilantro on top for added flavor.
