Description

Classic Elephant Ears are crispy, golden-fried dough treats dusted with a sweet cinnamon sugar mixture. This simple recipe yields deliciously fluffy and slightly puffed fried pastries perfect for a quick dessert or snack that can be made in under 20 minutes.

Ingredients

Dough:

  • 2 cups Flour
  • ½ tsp Salt
  • ½ tsp Baking Powder
  • 1 cup warm water (may need slightly less)

Frying & Topping:

  • Oil for Frying (about 3 inches deep in pot)
  • 2 Tbsp Sugar
  • 2 tsp Cinnamon

Instructions

  1. Mix Dough: In a medium mixing bowl, combine the flour, salt, and baking powder. Slowly stir in the warm water, adding gradually until a dough forms. You may not need to use all the water.
  2. Rest Dough: Let the dough sit for 5 minutes to relax the gluten, which makes it easier to roll out.
  3. Divide Dough: Roll the dough slightly and cut it into 6 equal pieces.
  4. Shape Dough Circles: Roll each piece into a circle about ½ inch thick.
  5. Heat Oil: Heat oil to about 350°F in a deep pot, maintaining 3 inches of oil depth for frying.
  6. Fry Dough: Fry each dough circle in the hot oil until golden brown and puffed slightly, then flip to cook the other side evenly.
  7. Drain: Remove fried dough and place on a plate lined with paper towels to absorb excess oil.
  8. Prepare Topping: Mix the cinnamon and sugar in a small bowl.
  9. Apply Topping: Sprinkle the cinnamon sugar mixture over the warm fried dough so it sticks well.
  10. Serve Warm: Enjoy immediately while the elephant ears are warm and fresh for best flavor and texture.

Notes

  • Use warm water to help activate the baking powder and aid dough formation.
  • Make sure oil temperature is around 350°F for proper frying; too cool oil will result in greasy pastry.
  • Do not overcrowd the pot while frying to maintain oil temperature and ensure even cooking.
  • Serve immediately for optimal crispiness as the dough tends to soften as it cools.
  • For extra flavor, you can add a pinch of vanilla or nutmeg to the dough.
