Ingredients
Vegetables and Seasoning
- 2 tbsp. Butter
- ½ Onion, chopped
- ½ Red Bell Pepper, chopped
- 2 Celery Stalks, chopped
- 2 tbsp. Old Bay Seasoning
Seafood
- 1 cup Raw Shrimp, peeled and deveined
- 1 cup Crab Meat
Base and Liquids
- 1 Cornbread, diced (around 4 cups)
- 2 cup Seafood Broth
- 2 Eggs, beaten
Garnish
- Fresh Parsley to serve
Instructions
- Cook Vegetables: Heat a non-stick skillet to medium-high heat and add the butter. Once melted, add the chopped onion, red bell pepper, and celery. Sauté for about 7 minutes until the onion becomes soft and translucent.
- Cook Shrimp and Season: Sprinkle the Old Bay seasoning over the vegetables, then arrange the raw shrimp in a single layer in the skillet. Cook the shrimp on both sides until opaque and cooked through. Meanwhile, preheat the oven to 350ºF (175ºC).
- Combine Mixture: Transfer the cooked vegetable and shrimp mixture to a large bowl. Add the crab meat, diced cornbread, seafood broth, and beaten eggs. Mix all the ingredients thoroughly until well combined.
- Bake Stuffing: Pour the mixture into a baking dish and bake in the preheated oven for 30 minutes, or until the top is golden brown and crunchy. Remove from oven and let it cool slightly before serving.
- Garnish and Serve: Sprinkle fresh parsley on top of the stuffing for a bright, fresh finish. Serve warm as a delicious side or main dish.
Notes
- Use fresh or thawed shrimp for best results.
- If you prefer a moister stuffing, add an additional ¼ to ½ cup of seafood broth.
- For a spicier kick, add a pinch of cayenne pepper along with Old Bay seasoning.
- Leftover stuffing can be refrigerated for up to 3 days and reheated in the oven.
- Substitute crab meat with canned crab or even chopped cooked lobster for variation.
