Description

This Easy Roasted Potatoes recipe features perfectly crispy and golden potatoes seasoned with garlic, salt, pepper, and fresh chives. Roasted in the oven to a delightful crispness, these potatoes make a versatile side dish ideal for any meal.

Ingredients

Potatoes

  • 3 pounds red or Yukon Gold potatoes

Seasoning

  • 3 tablespoons extra virgin olive oil
  • 4-5 medium garlic cloves, minced
  • 1 1/2 teaspoons kosher salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste
  • 2 tablespoons minced chives

Instructions

  1. Preheat Oven: Place an oven rack on the center shelf and preheat your oven to 400°F (200°C). Line a sheet pan with foil or parchment paper for easy cleanup.
  2. Prepare Potatoes: Cut the potatoes into halves or quarters depending on their size so that the pieces are bite-sized. In a large bowl, combine the potatoes with olive oil, minced garlic, kosher salt, and freshly ground black pepper. Toss thoroughly until potatoes are evenly coated with the seasoning and oil.
  3. Roast Potatoes: Spread the coated potatoes in a single layer on the prepared baking sheet. Roast in the oven for 45-60 minutes, stirring and flipping the potatoes a couple of times using a spatula during cooking to promote even browning and crispness on all sides.
  4. Finish and Serve: Once the potatoes are browned and crispy, remove them from the oven and transfer to a serving bowl. Toss with fresh minced chives and adjust seasoning if needed. Serve immediately for best taste and texture.

Notes

  • Use red or Yukon Gold potatoes for the best texture and flavor.
  • Cut potatoes uniformly to ensure even cooking.
  • Stirring the potatoes a few times during roasting helps them brown evenly and prevents sticking.
  • Leftover roasted potatoes can be stored in an airtight container in the refrigerator for 3-5 days.
  • This recipe can be easily doubled or halved according to your needs.
