Ingredients
Potatoes
- 3 pounds red or Yukon Gold potatoes
Seasoning
- 3 tablespoons extra virgin olive oil
- 4-5 medium garlic cloves, minced
- 1 1/2 teaspoons kosher salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- 2 tablespoons minced chives
Instructions
- Preheat Oven: Place an oven rack on the center shelf and preheat your oven to 400°F (200°C). Line a sheet pan with foil or parchment paper for easy cleanup.
- Prepare Potatoes: Cut the potatoes into halves or quarters depending on their size so that the pieces are bite-sized. In a large bowl, combine the potatoes with olive oil, minced garlic, kosher salt, and freshly ground black pepper. Toss thoroughly until potatoes are evenly coated with the seasoning and oil.
- Roast Potatoes: Spread the coated potatoes in a single layer on the prepared baking sheet. Roast in the oven for 45-60 minutes, stirring and flipping the potatoes a couple of times using a spatula during cooking to promote even browning and crispness on all sides.
- Finish and Serve: Once the potatoes are browned and crispy, remove them from the oven and transfer to a serving bowl. Toss with fresh minced chives and adjust seasoning if needed. Serve immediately for best taste and texture.
