Description

These Easy Lemon Brownies are a sweet and tangy treat, combining soft, chewy brownies with a refreshing burst of lemon. Topped with a zesty lemon glaze, this simple recipe is perfect for lemon lovers looking for a quick, beginner-friendly dessert that’s both delicious and easy to make.

Ingredients

For the Brownies:

1½ cups all-purpose flour

1½ cups granulated sugar

½ tsp salt

1 cup unsalted butter (softened)

4 large eggs (room temperature)

2 tbsp lemon zest (from 23 lemons)

⅓ cup fresh lemon juice

1 tsp vanilla extract

For the Lemon Glaze:

1 cup powdered sugar

23 tbsp fresh lemon juice

1 tbsp lemon zest

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper. Lightly grease the paper.

  2. Make the Batter:

    • In a small bowl, whisk together flour and salt.

    • In a large mixing bowl, cream together butter and sugar for 3-4 minutes using an electric mixer until light and fluffy.

    • Add eggs one at a time, mixing well after each addition.

    • Mix in lemon zest, lemon juice, and vanilla extract until well combined.

    • Fold in the flour mixture, mixing just until incorporated to avoid overmixing.

  3. Bake:

    • Pour the batter into the prepared pan and spread evenly.

    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

    • Allow the brownies to cool completely on a wire rack.

  4. Make the Lemon Glaze:

    • In a small bowl, combine powdered sugar and 2 tablespoons of lemon juice until smooth. Add more lemon juice for a thinner glaze.

    • Stir in lemon zest.

    • Once brownies are cooled, pour the glaze over the top and spread it evenly with a spatula.

    • Let the glaze set for at least 30 minutes before slicing.

Notes

Add-ins: Consider adding fresh or dried blueberries to the batter for extra flavor or texture.

Gluten-Free Option: Use a gluten-free flour blend to make these brownies gluten-free.

Lemon Poppy Seed Variation: Add 1-2 teaspoons of poppy seeds to the batter for a classic lemon poppy seed twist.
