Description

These Easy Garlic Rosemary Focaccia Muffins are a delightful twist on traditional focaccia bread, perfect for a cozy lunch or dinner. Made from simple ingredients including store-bought pizza dough, fragrant garlic, fresh rosemary, and a generous drizzle of olive oil, these golden, crispy, and herb-infused muffins bring robust flavor and a soft, airy texture to your table with minimal effort.

Ingredients

Focaccia Muffins

  • 1.5 pounds store-bought pizza dough
  • 1/2 scant cup extra virgin olive oil
  • 8 cloves garlic, chopped
  • 4 sprigs fresh rosemary, leaves removed and chopped
  • Flaky salt, to taste

Instructions

  1. Prepare the Dough: If time allows, place the pizza dough in a lightly greased bowl and let it come to room temperature. This helps the dough relax and become easier to work with. Using a bench scraper or sharp knife, cut the dough ball into 12 even slices. Shapes don’t need to be perfect, and avoid overworking the dough to maintain airiness.
  2. Oil the Muffin Pan: Pour 1 teaspoon of olive oil into each cup of a standard muffin pan to prevent sticking and add flavor.
  3. Shape the Dough Slices: Gently shape each dough slice into a rough ball, carefully handling them to preserve air bubbles. Place each dough ball into the oiled muffin cups. Cover the pan with a towel and let it rest near the oven as it preheats to 400°F (200°C); the warmth encourages the dough to rise.
  4. Prepare Garlic and Rosemary Oil: While the dough rests, chop the garlic cloves and rosemary leaves. In a small pan, heat the remaining olive oil over medium heat. To test readiness, flick a small drop of water into the oil—when it sizzles, the oil is hot. Remove from heat and add the chopped garlic and rosemary carefully, stirring until the sizzling stops to infuse the oil without burning the garlic.
  5. Top the Dough with Herb Oil: Spoon a generous amount of the infused olive oil over each dough ball, using all of the flavored oil. Using two fingers, press into the dough to create multiple dimples; this helps the garlic, rosemary, and salt adhere properly while creating that signature focaccia texture.
  6. Bake the Muffins: Bake the focaccia muffins in the preheated oven for 14-16 minutes until golden brown and crispy on the edges. If the tops brown too quickly, loosely cover with foil to prevent burning while allowing the muffins to bake through.

Notes

  • Allowing the dough to come to room temperature improves its elasticity and rise.
  • Do not overwork the dough to maintain airiness and texture.
  • Testing the olive oil temperature with a water drop ensures garlic won’t burn when added.
  • Use flaky salt for the best texture and flavor enhancement.
  • Covering with foil prevents over-browning if needed during baking.
  • These muffins are best enjoyed fresh and warm but can be stored in an airtight container for up to two days.
