Description

Ingredients

Vegetables

  • 1/2 red onion (diced)
  • 1 red bell pepper (diced)

  • 2 – 3 garlic cloves (minced)

Legumes

  • 1 1/4 cups dried lentils (rinsed)
  • 2 cans kidney beans (15 oz. each)

Tomatoes & Sauces

  • 2 cans diced tomatoes, not drained (15 oz. each)
  • 2 cans tomato sauce (15 oz. each)
  • 2 tablespoons tomato paste

Liquids & Broth

  • 1 1/2 cups vegetable broth

Spices

  • 1 1/2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika (preferably smoked paprika)
  • 1 teaspoon oregano
  • 1/4 teaspoon crushed red pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cracked pepper


Instructions

  1. Combine Ingredients: Add all ingredients except the tomato paste into the slow cooker. For tomato sauce, start with 1 1/2 cans and add more later if desired to adjust consistency.
  2. Cook the Chili: Cover the slow cooker and cook on HIGH for 4 to 6 hours until lentils are tender, or on LOW for 6 to 8 hours for a slower cook and enhanced flavor melding.
  3. Thicken the Chili: About 15 to 30 minutes before serving, stir in the tomato paste to thicken the chili. If it becomes too thick, add more vegetable broth to balance the texture to your liking.
  4. Serve: Spoon the chili into bowls and garnish with your favorite chili toppings such as shredded cheese, sour cream, chopped cilantro, or avocado to enhance flavor and presentation.
