Description

This Easy Chili Relleno Casserole is a delicious, vegetarian twist on the classic Chile Relleno dish. Featuring layers of whole green chilies, creamy Pepper Jack and cheddar cheeses, and a fluffy egg batter, this casserole offers a comforting and flavorful meal perfect for dinner or a satisfying side dish.

Ingredients

Chili and Cheese Layers

  • 1 (27-ounce) can whole green chilies
  • ½ pound cheddar cheese, grated
  • ¼ pound Pepper Jack cheese, grated

Batter

  • 1½ cups milk
  • 6 large eggs
  • ½ cup all-purpose flour
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is at the right temperature for baking the casserole evenly.
  2. Prepare Chilies and Cheese Layers: Split the whole green chilies lengthwise without washing or removing the seeds. Arrange half of the chilies evenly in the bottom of a 9×13-inch baking dish. Sprinkle half of the shredded cheddar and Pepper Jack cheese over the chilies. Repeat to create a second layer of chilies and cheese.
  3. Make Egg Batter: In a blender, combine the milk, eggs, all-purpose flour, coarse kosher salt, smoked paprika, and black pepper. Blend until the mixture is completely smooth and well incorporated.
  4. Assemble and Bake: Pour the blended egg batter over the layers of chilies and cheese in the baking dish, ensuring it is evenly distributed. Place the casserole in the oven and bake for 40 to 50 minutes, until the casserole is set and the top is golden brown.
  5. Serve: Remove the casserole from the oven and allow it to cool slightly. Slice into portions and serve warm as a comforting main dish or a flavorful side.

Notes

  • No need to wash or deseed the green chilies; using them straight from the can retains authentic flavor.
  • Grated Pepper Jack cheese adds a subtle spicy kick, but you can adjust cheese types based on preference.
  • The batter should be well blended for a smooth and fluffy texture.
  • Use a 9×13-inch baking dish for optimal layering and baking.
  • Baking time may vary slightly depending on your oven; check for a firm, golden top as an indicator that it is done.
