  • 3 cloves garlic, minced
  • 2/3 cup chicken broth
  • 1/2 cup full fat sour cream


Instructions

  1. Prepare Chicken: Cut the chicken breasts into 1-inch pieces. Sprinkle them with garlic powder and generously with salt and pepper. Dredge each piece in flour thoroughly to coat.
  2. Cook Chicken: Heat 2 tablespoons of olive oil in a deep skillet over medium-high heat. Cook the chicken in two batches to avoid overcrowding, allowing for an even brown. Each piece should cook about 3 minutes per side until golden and fully cooked (internal temperature 165°F). Add an additional tablespoon of olive oil for the second batch if the pan becomes too dry. Transfer cooked chicken to a plate.
  3. Sauté Vegetables: In the same pan, add butter and let it melt. Then add sliced mushrooms and chopped onions. Sauté for 6-8 minutes until the mushrooms release their moisture and develop a nice sear, and the onions soften.
  4. Add Flavorings: Stir in Dijon mustard, Worcestershire sauce, and minced garlic. Cook everything together for about one minute to blend the flavors.
  5. Deglaze and Combine: Pour in the chicken broth, scraping up the browned bits from the bottom of the pan for extra flavor. Return the chicken pieces to the skillet and cook for 2 more minutes stirring occasionally to incorporate all ingredients.
  6. Finish Sauce: Stir in the sour cream carefully and heat through gently for about one minute, ensuring the sauce does not boil to prevent curdling. Taste and adjust seasoning with salt and pepper as desired.
