Ingredients
For the Shrimp and Marinade
- 10 oz. raw medium shrimp, deveined and peeled

- 2 roma tomatoes, diced

- 2 California avocados, halved and pitted
Instructions
- Boil the Shrimp: Bring 3 quarts of water to a rolling boil. Add the raw shrimp and cook for 2 minutes until they are pink and opaque. Drain the shrimp and chop them into small pieces suitable for ceviche.
- Marinate the Shrimp: In a bowl, combine fresh lime and lemon juices. Add the chopped shrimp to this mixture and refrigerate for at least 45 minutes to allow the shrimp to marinate and absorb the citrus flavors.
- Prepare the Ceviche Mix: While the shrimp marinates, combine the diced avocado, roma tomatoes, green onions, jalapeno, cilantro, black pepper, kosher salt, garlic powder, and coriander in a separate bowl and mix well.
