Description

Easy Air Fryer Spring Rolls are crispy, golden, and packed with a savory filling of ground meat, mushrooms, and vegetables. With less oil than deep frying, they’re a healthier yet satisfying appetizer or snack. Perfect for parties, game nights, or weeknight dinners, these spring rolls are quick, customizable, and served with your favorite dipping sauce.


Ingredients

1 tablespoon olive oil

2 garlic cloves, minced

4 ounces mushrooms, chopped

1 lb ground meat (turkey, chicken, or beef)

1 cup shredded cabbage (red or green)

1.5 cups shredded carrots

1/3 cup green onions, thinly sliced

2 tablespoons coconut aminos

2 tablespoons rice vinegar

1 teaspoon tapioca or arrowroot flour

15 spring roll wrappers

Soy sauce or coconut aminos, for dipping


Instructions

  1. Heat olive oil in a skillet over medium heat. Add garlic and sauté 1 minute until fragrant. Add mushrooms and cook 5 minutes without stirring, then sauté until tender.
  2. Add ground meat, season lightly with salt and pepper, and cook 4–5 minutes, breaking apart until mostly cooked.
  3. Stir in cabbage, carrots, and green onions. Add coconut aminos and rice vinegar. Cook 2–3 minutes, then stir in arrowroot flour.
  4. Transfer filling to a bowl or baking sheet to cool completely.
  5. Soften a spring roll wrapper in water for 10 seconds. Place filling on bottom third, fold in sides, and roll tightly. Repeat with remaining wrappers and filling.
  6. Preheat air fryer to 375°F for 3–5 minutes. Lightly oil basket.
  7. Arrange rolls in a single layer, spray tops with oil, and air fry 8–10 minutes, flipping halfway, until golden and crispy.
  8. Serve warm with soy sauce or coconut aminos for dipping.

Notes

  • Make vegetarian by omitting meat and adding extra mushrooms or tofu.
  • Add bell peppers, zucchini, or bean sprouts for more veggies.
  • Use ground pork for a richer version.
  • Swap rice vinegar for lime juice for brightness.
  • Serve with sweet chili or peanut sauce for variety.
