Ingredients
Maple Ginger Roasted Almonds
- 1 cup sliced almonds
- 2 tablespoons maple syrup
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
Dressing
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 3 tablespoons maple syrup
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
Salad
- 5 ounces spring mix
- 1/2 cup fresh raspberries
- 1/2 cup fresh blueberries
- 1 cup snap peas
- 4 medium radishes, sliced
- 1 avocado, diced
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for roasting the almonds.
- Prepare Almonds: In a small bowl, mix together sliced almonds, maple syrup, ground ginger, and salt. Stir well to ensure the almonds are evenly coated with the mixture.
- Roast Almonds: Spread the coated almonds evenly on the prepared baking sheet. Bake in the preheated oven for 7 to 8 minutes until the almonds turn golden brown. Remove from oven and allow them to cool on a cooling rack.
- Make Dressing: While the almonds cool, combine olive oil, red wine vinegar, maple syrup, garlic powder, and salt in a blender. Blend until the mixture is smooth. Taste and adjust seasoning if necessary for a perfect balance.
- Assemble Salad: Place the spring mix in a large salad bowl. Add fresh raspberries, blueberries, snap peas, sliced radishes, diced avocado, and the cooled maple ginger roasted almonds on top.
- Add Dressing and Toss: Drizzle the desired amount of the maple vinaigrette over the salad. Generously sprinkle freshly ground black pepper, then gently toss everything together to evenly distribute the flavors.
- Serve: Serve the salad immediately as a fresh, vibrant dish perfect for spring meals and Easter celebrations.
Notes
- You can adjust the sweetness and acidity of the dressing by adding more or less maple syrup and vinegar according to your preference.
- The salad dressing can be prepared ahead and stored in the refrigerator for up to 3 days.
- For added texture and protein, consider adding grilled chicken or feta cheese if not aiming for a vegan salad.
