Ingredients

11/4 cups butter, softened (divided)

2 teaspoons baking powder

22/3 cups chopped pecans

2 teaspoons vanilla extract

3 cups all-purpose flour

1/2 teaspoon salt

2 cups sugar

1 cup milk

4 eggs


Instructions

  1. Toast the Pecans: Preheat your oven to 350°F (175°C). Place the chopped pecans and 1/4 cup of butter in a baking pan and bake for 20-25 minutes, stirring frequently, until toasted and fragrant. Set aside to cool.
  2. Make the Cake Batter: Cream together the sugar and 1 cup softened butter until light and fluffy. Add the eggs one at a time, beating well after each. Stir in the vanilla extract.
  3. Combine the Dry Ingredients: In a separate bowl, mix the flour, baking powder, and salt. Gradually add the dry mixture to the creamed butter mixture, alternating with the milk. Beat well after each addition to avoid lumps. Stir in 1-1/3 cups of toasted pecans.
