Description

This creamy dairy-free Caesar salad dressing is rich, lemony, and garlicky with a punchy flavor, perfect for a homemade Caesar salad. Made without dairy and easily blended in under 5 minutes, this dressing is versatile for Whole30, paleo, and low-carb diets, and can be prepared with or without anchovies.


Ingredients

For the Dressing

  • 1/2 cup Whole30 compliant mayo (homemade or store-bought)
  • 2 tablespoons lemon juice
  • 1 clove garlic, grated or very finely chopped
  • 1 teaspoon Whole30 compliant Dijon or whole grain mustard
  • 1/2 teaspoon anchovy paste OR 1 teaspoon coconut aminos
  • 1/4 to 1/2 teaspoon sea salt, to taste
  • 1/4 teaspoon black pepper
  • 1/3 cup olive oil


Instructions

  1. Combine Ingredients: In a medium-sized bowl, add the mayo, lemon juice, garlic, mustard, anchovy paste or coconut aminos, sea salt, and black pepper. Whisk these ingredients together thoroughly until well combined.
  2. Emulsify with Olive Oil: Slowly pour the olive oil into the mayo mixture while continuously whisking. This slow addition and whisking help create a smooth and creamy emulsified dressing.
  3. Season and Store: Taste and adjust seasoning with extra salt and pepper if needed. Serve the dressing immediately over your salad, or store in an airtight container in the refrigerator for up to 1 week. Before using stored dressing, give it a quick whisk to restore the emulsification.

  • This dressing can be made with or without anchovies, using anchovy paste or coconut aminos as alternatives.
