This creamy dairy-free Caesar salad dressing is rich, lemony, and garlicky with a punchy flavor, perfect for a homemade Caesar salad. Made without dairy and easily blended in under 5 minutes, this dressing is versatile for Whole30, paleo, and low-carb diets, and can be prepared with or without anchovies.
Ingredients
For the Dressing
- 1/2 cup Whole30 compliant mayo (homemade or store-bought)
- 2 tablespoons lemon juice
- 1 clove garlic, grated or very finely chopped
- 1 teaspoon Whole30 compliant Dijon or whole grain mustard
- 1/2 teaspoon anchovy paste OR 1 teaspoon coconut aminos
- 1/4 to 1/2 teaspoon sea salt, to taste
- 1/4 teaspoon black pepper
- 1/3 cup olive oil
Instructions
- Combine Ingredients: In a medium-sized bowl, add the mayo, lemon juice, garlic, mustard, anchovy paste or coconut aminos, sea salt, and black pepper. Whisk these ingredients together thoroughly until well combined.
- Emulsify with Olive Oil: Slowly pour the olive oil into the mayo mixture while continuously whisking. This slow addition and whisking help create a smooth and creamy emulsified dressing.
- Season and Store: Taste and adjust seasoning with extra salt and pepper if needed. Serve the dressing immediately over your salad, or store in an airtight container in the refrigerator for up to 1 week. Before using stored dressing, give it a quick whisk to restore the emulsification.
Notes
- This dressing can be made with or without anchovies, using anchovy paste or coconut aminos as alternatives.
- Use Whole30 compliant mayo and mustard to keep the recipe compliant with Whole30 and paleo diets.
