This Cucumber Vinegar Salad is a light, tangy, and refreshing side dish featuring crisp cucumbers, red onions, and a zesty vinegar dressing. With hints of dill and a touch of sweetness, this easy-to-make salad is perfect for picnics, barbecues, or as a healthy snack. Simple, flavorful, and a great way to enjoy fresh vegetables!

Ingredients

2 large English cucumbers, thinly sliced

1/2 small red onion, thinly sliced

1/3 cup white vinegar

2 tbsp granulated sugar

1 tbsp water

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp dried dill or 1 tbsp fresh dill, chopped

Instructions

  • Prepare the Dressing: Whisk together the vinegar, sugar, water, salt, and black pepper in a small bowl until smooth and the sugar dissolves.

  • Slice the Vegetables: Thinly slice the cucumbers and red onion using a mandoline or sharp knife.

  • Combine the Vegetables: In a large bowl, add the sliced cucumbers, red onion, and fresh or dried dill.

  • Toss with Dressing: Pour the vinegar dressing over the vegetables and toss until everything is evenly coated.

  • Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

  • Serve: Serve chilled as a refreshing side dish.

Notes

Add red pepper flakes or chopped jalapeno for a spicy kick.

Adjust sweetness by increasing or decreasing the sugar.

Use apple cider vinegar or rice vinegar for a different flavor twist.
