Description

This crunchy Ramen Noodle Salad combines toasted ramen noodles, slivered almonds, sesame seeds, and a mix of fresh green and red cabbage, carrots, and green onions, all tossed in a sweet and tangy dressing made with rice vinegar, soy sauce, and the seasoning packet from the ramen. Ingredients

SALAD:

  • 2 Tablespoons salted butter
  • 3 ounce package ramen noodles (reserve the seasoning packet for the dressing)
  • ½ cup slivered almonds
  • 3 Tablespoons sesame seeds
  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • ½ cup shredded carrots
  • 3 green onions, sliced

DRESSING:

  • ⅓ cup light olive oil
  • ¼ cup rice vinegar
  • 2 Tablespoons granulated sugar
  • 2 Tablespoons soy sauce
  • Seasoning packet from the ramen noodles


Instructions

  1. Toast Ingredients: Melt salted butter in a large skillet over medium heat. Break the ramen noodles into small chunks and add them to the butter. Then add the slivered almonds and sesame seeds. Stir constantly and toast the mixture until it turns light brown and fragrant, about 3-4 minutes. Remove from heat and allow to cool for 5 minutes.
  2. Assemble Salad Base: In a large bowl, combine shredded green cabbage, shredded red cabbage, shredded carrots, and sliced green onions. Mix thoroughly to distribute the vegetables evenly.
  3. Prepare Dressing: In a separate bowl, whisk together the light olive oil, rice vinegar, granulated sugar, soy sauce, and the reserved ramen seasoning packet until well combined and the sugar has dissolved.
  4. Toss Salad: Add the cooled toasted ramen noodle mixture (including almonds and sesame seeds) into the bowl with the vegetables. Pour the prepared dressing over the salad. Toss everything thoroughly to coat all ingredients evenly with the dressing.
  5. Serve: Serve the salad immediately for the best crunch, or chill it in the refrigerator for about an hour to enhance flavors and serve cold.
