Description

These Crispy Cornflake Chicken Nuggets are a crunchy, flavorful twist on classic nuggets—coated in seasoned cornflakes and baked or air-fried for a healthier, kid-friendly meal or snack.


Ingredients

150 g cornflakes

1.5 teaspoon garlic powder

1.5 teaspoon onion powder

1.5 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoon oil

60 g mayonnaise

700 g chicken breast, cut into small pieces


Instructions

  1. Place cornflakes in a large bowl or dish and crush them by hand until crumbly.
  2. Add garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
  3. Pour in the oil and stir to evenly coat the cornflake mixture.
  4. In another bowl, mix diced chicken breast with mayonnaise until all pieces are coated.
  5. Transfer chicken pieces to the cornflake mixture. Toss well until each piece is fully coated.
  6. Arrange coated chicken on a large baking tray or in an air fryer basket.
  7. Bake at 200°C (fan) for 15–16 minutes, or air fry at 180°C for 11–12 minutes, until golden and crispy.
  8. Ensure chicken is fully cooked through before serving.

  • Add a pinch of cayenne pepper or chili flakes for a spicy kick.
  • Swap mayonnaise with Greek yogurt for a lighter version.
  • Use gluten-free cornflakes for a gluten-free option.
