These Crispy Chicken Caesar Sandwiches are a delightful twist on the classic Caesar salad, with thin, crispy chicken cutlets served on brioche buns and topped with a creamy homemade Caesar dressing and romaine lettuce.
Ingredients
Crispy Chicken:
- 1 pound boneless, skinless chicken breasts
- kosher salt and pepper
- 2 large eggs, lightly beaten
- 1 ½ cups seasoned breadcrumbs
- ⅓ cup finely grated parmesan cheese
- 5 to 6 tablespoons olive oil
- 4 to 6 brioche buns
Caesar Salad:
- 4 garlic cloves, minced
- 3 tablespoons greek yogurt
- 2 tablespoons parmesan cheese
- 1 tablespoon dijon mustard
- 2 teaspoons vinegar
- 1 teaspoon anchovy paste
- ½ lemon, juiced
- kosher salt and pepper
- ⅓ cup olive oil
- 10 to 12 cups chopped romaine lettuce
- kosher salt and pepper
- ⅓ cup finely grated parmesan cheese
- ⅓ cup shaved parmesan cheese
Instructions
- Prepare the Crispy Chicken: Thinly slice the chicken breasts lengthwise to make thin cutlets. Season with salt and pepper. Dip in egg, then in breadcrumbs. Cook in olive oil until golden.
- Make the Caesar Dressing: Blend garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt, pepper in a processor. Stream in olive oil until creamy.
- Toss the Caesar Salad: Combine romaine with salt, pepper, Caesar dressing, finely grated and shaved parmesan.
- Assemble the Sandwiches: Place chicken cutlets on brioche buns, top with Caesar salad.
