Cover with another layer of paper towels and place a cutting board on top. Add heavy cans or pots to press out excess water. Let drain for at least 15 to 30 minutes while preheating the oven to 400°F.
- Cut the tofu: After draining, remove the weights and paper towels. Cut the tofu into desired shapes, typically 3/4-inch cubes, but any shape such as triangles or rectangles works well.
