Instructions
- Heat the oil: Add about an inch of oil to a heavy-bottomed pan and place it over medium heat, allowing it to heat thoroughly for frying.
- Prepare draining area: Line a small sheet pan or large plate with paper towels and set aside to drain excess oil from the fritters later.
- Mix dry ingredients: In a large bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, salt, pepper, garlic powder, and paprika. Stir well to evenly distribute the spices and leavening.
- Add wet ingredients: Pour the cold milk and lemon juice into the dry mixture, stirring until the batter is smooth and combined.
- Add onions: Quickly fold in the chopped onions and green onions, mixing until everything is evenly incorporated into the batter.
- Fry the fritters: Carefully spoon a heaping tablespoon of batter at a time into the hot oil. Avoid overcrowding to maintain the oil temperature. Fry each spoonful for 3 to 4 minutes per side, or until golden and crispy, then flip and cook the other side similarly.
- Drain and serve: Transfer the cooked fritters to the paper towel-lined pan to drain excess oil. Continue frying the remaining batter in batches. Serve the fritters immediately plain or with your favorite dipping sauce.
