Ingredients
1 lb cheese ravioli (fresh or frozen)
1 Tbsp olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
2 cups fresh spinach
½ cup sun-dried tomatoes, chopped
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
1 tsp Italian seasoning
½ tsp red pepper flakes (optional)
Salt and black pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté garlic for 30 seconds until fragrant.
- Add cherry and sun-dried tomatoes, cooking for 2–3 minutes until softened.
- Pour in heavy cream and chicken broth, stirring to combine.
- Stir in Parmesan, Italian seasoning, red pepper flakes (if using), salt, and pepper. Simmer for 2–3 minutes until sauce thickens slightly.
- Add spinach and cook until wilted.
- Gently toss in cooked ravioli, coating well with sauce.
- Simmer 1 more minute to meld flavors. Serve warm.
Notes
- Use vegetable broth and dairy-free cheese for a vegetarian or vegan version.
- Add grilled chicken or shrimp for extra protein.
- Simmer longer or add more cheese to thicken the sauce.
