Ingredients
1 lb turkey breast or thighs, cut into bite-sized pieces

1 cup chicken broth
1 cup sour cream
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, chopped (for garnish)

Instructions
- Cook the turkey: Heat olive oil in a large skillet over medium heat. Add the turkey pieces and cook until browned on all sides, about 5-7 minutes. Remove the turkey from the skillet and set aside.
- Sauté the vegetables: In the same skillet, add the chopped onion and garlic. Cook for 2-3 minutes, until the onion is softened. Add the sliced mushrooms and cook for another 3-4 minutes, until the mushrooms release their moisture and begin to brown.
- Add spices and liquids: Stir in paprika, salt, and pepper. Then, pour in the chicken broth and bring to a simmer. Cook for 3-4 minutes to reduce the broth slightly.
- Make the creamy sauce: Lower the heat and stir in the sour cream, Dijon mustard, and Worcestershire sauce. Return the turkey to the skillet, and stir until well combined. Simmer for another 5-7 minutes, until the sauce thickens and the turkey is cooked through.
- Serve: Taste and adjust seasoning if necessary. Serve the creamy turkey stroganoff over your choice of pasta, rice, or mashed potatoes, and garnish with fresh parsley.
