Ingredients

5 cups uncooked egg noodles

1 cup frozen peas

1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted

1 cup fat-free sour cream

2/3 cup grated Parmesan cheese

1/3 cup 2% milk

1/4 teaspoon salt

2 cans (5 ounces each) light tuna in water, drained and flaked

1/4 cup finely chopped onion

1/4 cup finely chopped green pepper

1/2 cup soft bread crumbs

1 tablespoon butter, melted


Instructions

  1. Preheat your oven to 350°F.
  2. Cook the noodles according to the package directions for al dente, adding the frozen peas during the last minute of cooking. Once done, drain and set aside.
  3. In a large bowl, combine the condensed soup, sour cream, Parmesan cheese, milk, and salt. Stir in the tuna, onion, and green pepper.
  4. Add the cooked noodles and peas to the bowl and toss everything together to combine evenly.
  5. Transfer the mixture into an 11×7-inch baking dish coated with cooking spray.
  6. In a small bowl, mix the bread crumbs with the melted butter. Sprinkle the breadcrumb mixture over the casserole.
  7. Bake, uncovered, for 25-30 minutes or until the casserole is bubbly and the topping is golden brown.
