Using a knife, chop everything together finely, then mash with the back of a fork until it forms a thick paste. Use a spatula to transfer all of this paste into a mixing bowl.
- Add Avocado: Peel and pit the avocados, then add the flesh to the bowl with the paste. Use a fork to mash the avocado into the paste until well combined but still slightly chunky. Stir in 1 tablespoon lime juice, 1 tablespoon lemon juice (or extra lime juice), garlic powder if using, and season with additional salt and pepper to taste—typically another 1/4 teaspoon of each.
- Serve: Taste the guacamole with some chips to check the seasoning, remembering chips are salty. Adjust salt, pepper, lime, or lemon juice as desired. Serve immediately with chips or use as a topping for your favorite dishes.
