Description

Creamy Garlic Mashed Red Potatoes are a comforting and flavorful side dish made with buttery red potatoes, minced garlic, Greek yogurt, and a splash of half & half. Perfect for a weeknight dinner or a festive holiday meal, this recipe delivers creamy, garlicky goodness that pairs well with a variety of mains.

Ingredients

Potatoes

  • 3 pounds red potatoes (about 12 medium), scrubbed well

Dairy & Flavorings

  • 4 tablespoons unsalted butter, cubed
  • 4 small-medium garlic cloves, minced (use 6 for more flavor)
  • ⅓ cup Greek yogurt, 2% or full fat for best flavor
  • ½ cup half & half, divided
  • 1 teaspoon kosher salt, or to taste

Instructions

  1. Boil potatoes: Bring a large pot of water to a boil. While waiting, chop the red potatoes into quarters. Carefully add the potatoes to the boiling water, then reduce heat to medium. Boil the potatoes for 20-25 minutes or until they are very tender when pierced with a fork. Drain the potatoes and remove the pot from heat.
  2. Mash potatoes: Return the drained potatoes to the same pot. Add the cubed butter, minced garlic, Greek yogurt, ¼ cup of the half & half, and kosher salt. Use a potato masher to mash the potatoes until you reach your preferred consistency. For an ultra-smooth texture, you can use a handheld electric mixer to blend them further. Gradually add the remaining half & half while mixing to achieve a creamy texture.
  3. Serve: Spoon the mashed potatoes into a serving dish. Top with extra butter, a sprinkle of chopped fresh parsley, and optionally some grated Parmesan cheese for added flavor. Serve warm as a comforting side dish.

Notes

  • Use 2% or full-fat Greek yogurt for the best creamy texture and flavor.
  • Adjust garlic quantity according to your preference for a milder or stronger garlic flavor.
  • Adding Parmesan cheese on top adds a delicious savory note but is optional.
  • For smoother mashed potatoes, use an electric mixer instead of just a masher.
  • Half & half can be substituted with milk or cream but will affect richness.
