- ½ cup half & half, divided

Instructions
- Boil potatoes: Bring a large pot of water to a boil. While waiting, chop the red potatoes into quarters. Carefully add the potatoes to the boiling water, then reduce heat to medium. Boil the potatoes for 20-25 minutes or until they are very tender when pierced with a fork. Drain the potatoes and remove the pot from heat.
- Mash potatoes: Return the drained potatoes to the same pot. Add the cubed butter, minced garlic, Greek yogurt, ¼ cup of the half & half, and kosher salt. Use a potato masher to mash the potatoes until you reach your preferred consistency. For an ultra-smooth texture, you can use a handheld electric mixer to blend them further. Gradually add the remaining half & half while mixing to achieve a creamy texture.
- Serve: Spoon the mashed potatoes into a serving dish. Top with extra butter, a sprinkle of chopped fresh parsley, and optionally some grated Parmesan cheese for added flavor. Serve warm as a comforting side dish.
