Ingredients
Chicken
- 2 large boneless skinless chicken breasts
- Salt & pepper to taste
- Flour for dredging
Cooking Fat
- 1 tablespoon olive oil
- 2 tablespoons butter, divided
Sauce
- 1 whole head garlic cloves, peeled
- 1/2 cup chicken broth or stock
- 1/2 teaspoon lemon juice
- 1/4 teaspoon garlic powder
- 1 cup heavy/whipping cream
Garnish
- Parsley, chopped (optional)
Instructions
- Prepare the chicken: Cut each chicken breast in half lengthwise to create 4 smaller cutlets. Season them generously with salt and pepper. Dredge each cutlet in flour, coating all sides evenly.
- Sear the chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. When the pan is hot, add the chicken cutlets and cook for 4-5 minutes per side, until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Cook the garlic: Reduce heat to medium or medium-low if using cast iron. Add the remaining 1 tablespoon of butter to the skillet and let it melt. Add the peeled garlic cloves and sauté for 3-4 minutes, stirring frequently, until the garlic is lightly browned on the outside and fragrant.
- Deglaze and reduce: Pour in the chicken broth, then add lemon juice and garlic powder. Let the mixture bubble and simmer for about 4 minutes, stirring occasionally, until the liquid reduces noticeably.
- Add the cream and finish cooking: Stir in the heavy cream and return the chicken cutlets to the skillet. Let everything cook together for another 5 minutes or until the sauce thickens and the chicken is fully cooked through.
- Garnish and serve: Sprinkle freshly chopped parsley over the chicken for added color and freshness if desired. Serve warm and enjoy your creamy garlic chicken.
Notes
- For best results, use fresh garlic cloves rather than pre-minced to maximize flavor.
- Dredging the chicken in flour helps achieve a golden crust and thickens the sauce slightly.
- You can substitute heavy cream with half-and-half for a lighter option, but the sauce will be less rich.
- Serve with steamed vegetables, rice, or mashed potatoes to complete the meal.
- If you prefer more garlic flavor, you can add a pinch of garlic powder to the flour dredge.
