Chicken

  • 2 large chicken breasts, split lengthwise into thinner cutlets (or 4 medium/small chicken breasts)
  • 1 Tbsp olive oil
  • Kosher salt & black pepper, to taste

Gravy

  • 3 Tbsp butter
  • 1 Tbsp chicken base (recommend Better Than Bouillon brand)
  • 4 Tbsp all purpose flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups chicken stock
  • 1/2 cup water
  • 1/4 cup heavy cream (optional)

  • Instant Pot mashed potatoes or preferred mashed potatoes


Instructions

  1. Season Chicken: Lightly season the chicken breasts with kosher salt and black pepper. Set aside.
  2. Mix Flour and Spices: In a small bowl, combine the flour, salt, pepper, onion powder, and garlic powder. Mix well and set aside.
  3. Cook Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5 minutes per side, until the internal temperature reaches 165°F. Remove chicken from the pan and set aside.
  4. Prepare Roux: Lower heat to medium-low. Add butter and chicken base to the skillet and stir until melted and combined.
  5. Add Flour Mixture: Sprinkle the flour and seasoning mixture into the pan, stirring constantly to form a roux. Cook for 30 seconds to 1 minute, stirring, ensuring it does not burn.
  6. Add Liquids: Slowly pour in the chicken stock while scraping the pan to loosen browned bits. Add water and whisk thoroughly to prevent lumps. Allow the gravy to simmer until it thickens to the desired consistency.
  7. Finish Gravy: Stir in the optional heavy cream for extra richness. Shred the cooked chicken if desired, then return the chicken along with any juices back into the gravy. Let simmer together for a few minutes to combine flavors.
