Ingredients
¾ cup warm milk (about 110 °F)
2 ¼ teaspoons active dry yeast (1 packet)
¼ cup granulated sugar
1 large egg
1 egg yolk
¼ cup unsalted butter, melted
3 cups all-purpose flour
½ teaspoon salt
1 teaspoon vanilla extract
Blue gel food coloring
½ cup unsalted butter, softened (filling)
¾ cup brown sugar (filling)
2 tablespoons ground cinnamon (filling)
½ cup crushed chocolate sandwich cookies (filling)
¼ cup mini chocolate chips (filling)
4 oz cream cheese, softened (icing)
¼ cup unsalted butter, softened (icing)
1 cup powdered sugar (icing)
½ teaspoon vanilla extract (icing)
2–3 tablespoons milk (icing)
½ cup crushed chocolate sandwich cookies (topping, optional)

Instructions
- Warm milk to about 110 °F and stir in yeast and sugar. Let sit for ~5 minutes until foamy.
- In a large bowl, whisk the yeast mixture with egg, yolk, melted butter, vanilla extract, and blue food coloring until evenly tinted.
- Add flour and salt. Stir to form a dough, then knead until smooth.
- Place dough in a greased bowl, cover, and let rise for about 1 hour until doubled in size.
- Mix softened butter, brown sugar, and cinnamon until smooth. Stir in crushed cookies and chocolate chips.
- Roll dough on a floured surface to a 16×12 inch rectangle. Spread filling evenly over dough.
- Roll tightly from the long side into a log. Trim ends and slice into 9–12 pieces, about 1½ inches thick.
- Place rolls in a greased 9-inch round or square pan. Cover and let rise 30–45 minutes until puffy.
- Preheat oven to 350 °F (175 °C) and bake rolls for 20–25 minutes until golden and cooked through.
- Beat together cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk to desired consistency.
- Spread icing over warm rolls and top with extra crushed cookies and chocolate chips if desired.
