- 1 1/2 cups chocolate melting wafers
Instructions
- Combine dry ingredients: In a mixing bowl, combine 2 2/3 cups of flaked sweetened coconut, 1/4 cup of all-purpose flour, 2/3 cup of granulated sugar, and 1/4 teaspoon of kosher or fine sea salt. Stir these ingredients together until evenly mixed.
- Add wet ingredients: Using an egg separator, add 4 egg whites to the dry mixture, followed by 1 teaspoon of vanilla extract. Mix thoroughly until the mixture is evenly combined and slightly sticky.
- Preheat oven and prepare baking sheet: Preheat your oven to 325ºF (163ºC). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
- Drop cookie batter: Drop the mixture by rounded teaspoonfuls onto the prepared baking sheet, spacing them evenly to allow for spreading.
- Bake: Place the baking sheet in the preheated oven and bake for 18-20 minutes, or until the edges of the macaroons start to turn golden brown.
- Cool cookies: Remove the baking sheet from the oven and let the cookies cool on a wire rack completely before handling further.
- Optional chocolate dip: If desired, melt 1 1/2 cups of chocolate melting wafers according to package instructions. Dip the bottoms of the cooled cookies into the melted chocolate, then place them back on the rack to set. Optionally, drizzle some melted chocolate on top of the nests for an extra decorative touch.
