Description

A moist and cozy cinnamon apple cake layered with spiced apples, a buttery cinnamon swirl, and finished with a sweet glaze. Perfect for fall baking or whenever you crave a warm spiced dessert.

Ingredients

For the apples:

45 g granulated sugar

1 teaspoon cinnamon

2 apples, peeled and diced

For the cinnamon swirl:

150 g light brown sugar

2 tablespoons cinnamon

120 g unsalted butter, melted

For the cake:

360 g plain flour

200 g caster sugar

4 teaspoons baking powder

300 ml whole milk

1 teaspoon vanilla extract

2 large eggs, lightly beaten, room temperature

110 g unsalted butter, melted and cooled slightly

For the glaze:

200 g icing sugar

40 ml whole milk

Instructions

  1. Preheat oven to 180°C (160°C fan). Line an 8×10-inch baking tray with non-stick baking paper.
  2. Prepare the apples: Peel and dice apples. Mix with sugar and cinnamon to coat. Set aside.
  3. Make the cinnamon swirl: Stir together brown sugar, cinnamon, and melted butter until smooth.
  4. Prepare the cake batter: In a large bowl, mix flour, caster sugar, and baking powder. In another bowl, whisk milk, vanilla, eggs, and melted butter. Combine wet and dry ingredients until just mixed.
  5. Assemble: Spread half the batter in the tray. Add half the cinnamon swirl and apples. Repeat with remaining batter, swirl, and apples. Swirl the top gently with a knife.
  6. Bake for 45–50 minutes, or until a skewer inserted in the center comes out clean.
  7. Make the glaze: Mix icing sugar with milk until smooth. Drizzle over cooled cake before serving.

Notes

  • Add walnuts or pecans for crunch.
  • Swap pears for apples for variety.
  • Use mixed apple types for sweet-tart balance.
  • Add nutmeg or allspice to cinnamon swirl for extra spice.
